Place all ingredients except oil in the food processor or blender
Blend until no chunks remain
Add oil and continue blending until smooth
Tastes great on oven-warmed pita
I have used jalapeños, fancy decorative hot peppers, pickled banana peppers, chilis, and some other kind that we never put a name to, and I think the only thing I would advise against is the pickled ones, as they add a slight pickly flavour, although not a bad one.
For the red onion, I just put in one layer. Or a chunk. Or whatever seems right at the time.
I get the sundried tomatoes in a small jar. Try not to get too much of the oil in there at first, or the spread will clump up.
